Apple Cider Donuts, in 5 ideas

  1. Reducing the cider concentrates the flavor; skipping this step gives bland donuts.
  2. A zip-top bag with the corner snipped makes an easy piping bag for filling the donut pan neatly.
  3. Roll the donuts while still warm so the cinnamon sugar sticks to the melted butter.
  4. These are best the day they are made, but a 10-second microwave revive brings them back.
  5. Try a maple glaze (powdered sugar plus maple syrup) as an alternative coating.

What you need

Ingredients

  • 1 1/2 cups apple cider
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder plus 1/2 teaspoon baking soda
  • 1 1/2 teaspoons ground cinnamon plus 1/2 teaspoon ground nutmeg (plus 1 tablespoon cinnamon for coating)
  • 1/2 teaspoon salt
  • 1 1/4 cups granulated sugar, divided (1/2 cup batter, 3/4 cup coating)
  • 1/2 cup unsweetened applesauce
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 tablespoons melted butter

How to make it

Directions

  1. Simmer the apple cider in a small saucepan until reduced to 1/2 cup, about 15 minutes. Let it cool.
  2. Preheat the oven to 350 degrees F (175 C). Grease a 12-cup donut pan.
  3. Whisk the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. In another bowl, whisk the sugar, applesauce, oil, eggs, vanilla, and the reduced cider until smooth.
  5. Fold the dry ingredients into the wet just until combined. Spoon or pipe the batter into the donut pan, filling each cup about three-quarters full.
  6. Bake 12 to 14 minutes, until a toothpick comes out clean. Cool 5 minutes in the pan.
  7. Stir the coating sugar and cinnamon together. Brush each warm donut with melted butter and roll in the cinnamon sugar.
Buy apple cider by the gallon in fall when it is cheapest, freeze extra in half-cup portions, and skip the store premium for small cider jugs.
