BBQ Bacon Burger, in 5 ideas

  1. Thick-cut bacon stays meaty and crisp instead of crumbling into dust.
  2. Smoked paprika in the beef adds a backyard-smoker flavor without a grill.
  3. Keep the onion ring batter thin so it fries up crisp instead of bready.
  4. Brush sauce on the patty near the end so it caramelizes instead of burning.
  5. Warm the barbecue sauce in a small pan so it spreads without chilling the patty.

What you need

Ingredients

  • 700g ground beef (80/20)
  • 8 strips thick-cut bacon
  • 4 slices cheddar cheese
  • 120ml barbecue sauce, plus extra for serving
  • 1 large yellow onion, cut into 1cm rings
  • 100g plain flour
  • 1 large egg, beaten
  • 80g breadcrumbs
  • 4 potato burger buns
  • 2 tbsp vegetable oil
  • 1 tsp smoked paprika and 1/2 tsp black pepper
  • 1 tsp salt

How to make it

Directions

  1. Cook the bacon in a large skillet over medium heat until crisp, 8 to 10 minutes. Drain on paper towels and set aside.
  2. Season the flour with half the salt and pepper. Dip the onion rings in flour, then beaten egg, then breadcrumbs, coating each one fully.
  3. Heat the vegetable oil in the same skillet over medium-high heat. Fry the onion rings 2 to 3 minutes per side until deep golden. Drain on paper towels.
  4. Mix the ground beef with the smoked paprika and remaining salt and pepper. Form 4 patties with a shallow dent in the center of each.
  5. Grill or pan fry the patties over high heat for 3 to 4 minutes per side.
  6. Brush each patty generously with barbecue sauce in the last minute of cooking and top with a slice of cheddar. Cover briefly to melt.
  7. Toast the buns. Layer each bottom bun with a saucy patty, 2 strips of bacon, and a few onion rings. Add extra barbecue sauce, close, and serve.
Buy a big bag of plain breadcrumbs and a bag of flour, both are cheap in bulk and you will use them for onion rings, cutlets, and coating chicken all year.
