- Lumpy batter is correct. Overmixing develops gluten and makes pancakes tough and flat. Stir until the flour just disappears and stop.
- Medium heat, not high. Too hot burns the outside before the inside sets. The first pancake is always a test; adjust from there.
- Rest the batter. Five minutes lets the flour hydrate and the leaveners activate. You will see the difference in height.
- Buttermilk is doing real work. Its acid supercharges the baking soda for extra lift and adds a subtle tang. Do not substitute regular milk.
- Keep them warm in the oven. A 200F oven holds a whole batch at perfect serving temp without drying them out.

- 2 cups all-purpose flour
- 2 tbsp sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp kosher salt
- 2 cups buttermilk, shaken
- 2 large eggs
- 4 tbsp butter, melted, plus more for the pan
- 1 tsp vanilla extract
- Maple syrup and butter, to serve
How to make it

- Whisk the flour, sugar, baking powder, baking soda, and salt in a large bowl.
- In a separate bowl, whisk the buttermilk, eggs, melted butter, and vanilla.
- Pour the wet into the dry and stir until just combined. Lumps are fine and expected. Let the batter rest 5 minutes while the pan heats.
- Heat a griddle or large skillet over medium heat. Add a small knob of butter and swirl to coat.
- Scoop 1/4-cup portions of batter onto the hot surface, leaving room to spread.
- Cook until bubbles form on the surface and the edges look set, about 2 to 3 minutes. The bubbles should pop and stay open.
- Flip once and cook 1 to 2 minutes more until golden on the second side.
- Keep warm in a 200F oven while you finish the batch. Serve stacked high with butter and warm maple syrup.
