Chorizo al Vino, in 5 ideas
- Spanish chorizo is cured and smoky, totally different from Mexican chorizo
- The paprika oil that renders out becomes part of the sauce
- A cheap drinkable red wine is perfect; no need for anything fancy
- This is one of the fastest tapas you can make
- The bread for mopping is not optional
What you need
Ingredients
- 1 lb Spanish cured chorizo, sliced
- 1 cup dry red wine
- 2 cloves garlic, minced
- 1 bay leaf
- Crusty bread, for serving
- 1 tbsp honey (optional, to balance)
How to make it
Directions
- Sear the chorizo slices in a skillet until they release their paprika oil.
- Add garlic and cook 1 minute.
- Pour in the red wine and add the bay leaf.
- Simmer 15 minutes until the sauce thickens and coats the chorizo.
- Remove the bay leaf and serve hot with crusty bread.
Money saver. Look for chorizo at the deli counter rather than pre packaged; it is often cheaper and you can buy exactly what you need.
