Mango Sticky Rice, in 5 ideas
- Glutinous rice is the only rice that works here, regular rice will not get sticky
- Soaking is non negotiable, it is what lets the grains steam evenly
- The salted coconut drizzle against the sweet rice is the contrast that makes the dish
- Serve the rice warm, not hot, so the mango stays fresh and vibrant
- Ripe mangoes should smell fragrant at the stem and give slightly when pressed
What you need
Ingredients
- 1.5 cups glutinous sticky rice
- 1 can (14 oz) coconut milk, divided
- 1/3 cup sugar
- 1/2 tsp salt, divided
- 2 ripe mangoes, sliced
- 1 tbsp sesame seeds, toasted
How to make it
Directions
- Soak the sticky rice in water at least 4 hours or overnight, then drain well.
- Steam the rice in a cheesecloth lined steamer 20 to 25 minutes until tender and translucent.
- Warm 1 cup of the coconut milk with the sugar and 1/4 tsp salt until dissolved, without boiling.
- Fold the warm coconut mixture into the hot rice, cover, and rest 15 minutes to absorb.
- Simmer the remaining coconut milk with 1/4 tsp salt 2 minutes for the drizzle.
- Serve the rice with mango slices, drizzle with salted coconut cream, and sprinkle sesame seeds.
Money saver. A bag of glutinous rice is cheap and makes many batches. This elegant dessert costs very little per serving.
