Salisbury Steak, in 5 ideas
- Oval patties are the classic shape, distinguishing them from round hamburger patties.
- Searing first builds flavor in both the patties and the gravy.
- The mushrooms are not optional. They make the gravy.
- Worcestershire in both the patties and the gravy ties everything together.
- This is essentially a deconstructed meatloaf with better gravy.
What you need
Ingredients
- 1.5 lbs ground beef (80/20)
- 1/3 cup breadcrumbs
- 1 egg
- 1 tbsp Worcestershire sauce
- 1 tsp each onion powder, garlic powder, and salt, plus 1/2 tsp pepper
- 2 tbsp butter
- 8 oz mushrooms, sliced
- 1 onion, sliced
- 2 tbsp flour
- 2 cups beef broth
- 1 tbsp tomato paste
How to make it
Directions
- Mix the beef, breadcrumbs, egg, Worcestershire, onion powder, garlic powder, salt, and pepper. Form into 4 oval patties.
- Sear the patties in a skillet over medium high heat, 3 minutes per side. Remove to a plate.
- Melt butter in the same skillet. Cook the mushrooms and onion 8 minutes until golden.
- Stir in the flour, cook 2 minutes. Whisk in the broth and tomato paste.
- Return the patties to the skillet. Simmer 15 minutes until the gravy thickens and the patties are cooked through.
- Serve over mashed potatoes or egg noodles.
Make the patties a day ahead and refrigerate. The flavors meld and they hold together even better when seared cold.
